When it comes to proteins, there are many different types. You have egg, soy, goat milk, caseins, and then whey. Whey is considered the most beneficial for supplementation due to its rapid digestion and amino acid concentration built to aid in muscle building, with high levels of branched chain amino acids and plenty of glutamine. Even within Whey protein itself, there are many stages of filtration and refinement that should be understood.
Basic whey protein is whey protein concentrate. Its as rudimentary as you can get with protein, being one step removed from the separation process of liquid whey and casein. It has high amounts of cholesterol, lactose and can have some fat. It is most likely to have some chunking when mixed and a pungent aftertaste.
Whey isolates on the other hand are way more refined, basically removing a lot of the "junk" other than the protein. Whey isolates will have much lower levels of fat, cholesterol and carbohydrates, but often have higher levels of sodium but this is mainly a function to increase taste. A higher level of artificial sweeteners generally are present as well to continue to improve upon the taste, but unlike basic whey's, the potent after taste is all but removed.
There is a step beyond whey isolates called hydrolyzed whey peptides. These are whey isolates that are predigested and are regarded to be the best quality whey proteins available, but due to their price, they are found in limited amount and quantity.
